Given how disappointing my last batch of macarons turned out with the new oven and store brought ground almonds, i just had to give them another shot- and what better way to do so than with some Christmas themed ones.
I stuck to my tried and tested ways and grinded whole almonds with icing sugar, played around with the type of colouring used- i replaced the liquid food colouring i experimented with the last time with gel paste- and kept my fingers firmly crossed.
I knew i was on the right track when the macaron batter formed a smooth top a few seconds after being neatly piped out into uniform rounds.
True enough, within a couple of minutes basking in the comforting warmth of the oven, these little babies rose a little in their ever so dainty fashion and developed feet. Success!
Sandwiched with mint chocolate ganache and a little dabble with a paintbrush, these macarons truly were Christmas personified. And there’s no better gift for me than being able to put my macaron disaster behind me.
